Oh, you’re in for a treat — Chicken Fried Steak is Southern comfort food at its finest: crispy, golden breaded steak smothered in creamy pepper gravy. Here’s a classic, foolproof version.


🥩 Classic Chicken Fried Steak with Cream Gravy

Ingredients (Serves 4)

For the steak:

  • 4 cube steaks (about 4–6 oz each)
  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp cayenne pepper (optional, for a little heat)
  • 2 large eggs
  • ¾ cup buttermilk (or regular milk with a splash of lemon juice)
  • Salt and black pepper, to taste
  • Vegetable oil or shortening, for frying

For the gravy:

  • 3 tbsp pan drippings (from the fried steaks)
  • 3 tbsp all-purpose flour
  • 2 to 2 ½ cups whole milk
  • Salt and lots of black pepper, to taste

Instructions

1. Prep the meat:

  • Pat cube steaks dry with paper towels. Season both sides generously with salt and pepper.

2. Set up a breading station:

  • In one shallow bowl, whisk together flour, baking powder, paprika, garlic powder, onion powder, cayenne, salt, and pepper.
  • In another bowl, whisk together eggs and buttermilk.

3. Dredge the steaks:

  • Dip each steak into the flour mixture, shaking off excess.
  • Then dip into the egg mixture, letting excess drip off.
  • Finally, dredge again in the flour mixture, pressing gently to make the coating stick.
  • Place coated steaks on a wire rack and let them sit for 5–10 minutes (this helps the crust adhere).

4. Fry:

  • In a large cast-iron skillet, heat about ½ inch of oil over medium-high heat (around 350°F / 175°C).
  • Fry steaks one or two at a time until golden brown, about 3–4 minutes per side.
  • Transfer to a paper towel–lined plate or rack to drain.

5. Make the gravy:

  • Pour off all but 3 tablespoons of the oil, leaving any browned bits in the skillet.
  • Whisk in 3 tablespoons flour, cooking over medium heat until golden brown (about 1 minute).
  • Gradually whisk in milk, stirring constantly to avoid lumps.
  • Cook until thickened (5–7 minutes).
  • Season generously with salt and lots of black pepper.

6. Serve:

  • Spoon the creamy gravy over the crispy steaks.
  • Serve with mashed potatoes and green beans for a classic Southern plate.

Tips for Perfect Chicken Fried Steak

  • Cube steak (tenderized round steak) is traditional, but you can pound your own round steak thinly if needed.
  • Don’t rush the oil — if it’s too cool, the coating will soak up grease instead of crisping.
  • For extra crispy coating, double-dip: flour → egg → flour → egg → flour.
  • The gravy thickens as it cools — thin with a splash of milk if needed.
