🔪 Instructions

  1. Flatten for even cooking (optional but recommended):
    Place chicken between two sheets of plastic wrap or parchment. Gently pound to about ¾-inch thickness using a meat mallet or rolling pin.

  2. Season:
    Pat dry with paper towels. Rub both sides with olive oil, then season generously with salt, pepper, garlic powder, paprika, and herbs.

  3. Sear:
    Heat a large skillet over medium-high heat. Add a drizzle of olive oil.
    Place chicken breasts in the pan and cook 5–6 minutes per side, without moving them too much, until golden brown and cooked through (internal temp: 165°F / 74°C).

  4. Add butter & rest:
    In the last minute, add 1 tbsp butter to the pan and spoon it over the chicken for flavor.
    Transfer to a plate, cover loosely, and rest 5 minutes before slicing.

  5. Serve:
    Slice and serve with lemon wedges, a sprinkle of parsley, or your favorite sides — like mashed potatoes, rice, or salad.

  • Garlic Butter Chicken: Sauté minced garlic in butter at the end and pour over chicken.

  • Creamy Tuscan Chicken: Add sun-dried tomatoes, spinach, and cream to the pan after cooking.

  • Honey Mustard Glaze: Mix 2 tbsp honey + 1 tbsp Dijon mustard + 1 tsp soy sauce and brush over chicken in the last minute.

  • Baked version: Bake seasoned breasts at 400°F (200°C) for 20–25 minutes.
