Here’s a classic Chicken and Mashed Potatoes dinner—comfort food at its best 🍗🥔


Chicken and Mashed Potatoes (with Gravy)

Ingredients (Serves 4)

Chicken

  • 4 chicken breasts or thighs
  • Salt & black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tbsp olive oil
  • 2 tbsp butter

Mashed Potatoes

  • 2 lb potatoes (Yukon Gold or Russet), peeled & cubed
  • ½ cup milk or cream, warmed
  • 4 tbsp butter
  • Salt & pepper, to taste

Simple Gravy (Optional)

  • 2 tbsp butter or pan drippings
  • 2 tbsp flour
  • 1½ cups chicken broth
  • Salt & pepper

Instructions

Chicken

  1. Season chicken with salt, pepper, garlic powder, and paprika.
  2. Heat olive oil in a skillet over medium heat.
  3. Cook chicken 6–7 minutes per side (breasts) or 8–10 minutes (thighs) until golden and internal temp reaches 165°F (74°C).
  4. Add butter to pan, spoon over chicken, then rest 5 minutes.

Mashed Potatoes

  1. Boil potatoes in salted water 15–20 minutes until fork-tender.
  2. Drain well.
  3. Mash with butter and warm milk.
  4. Season with salt and pepper.

Gravy (Optional)

  1. Melt butter or use pan drippings in a saucepan.
  2. Whisk in flour and cook 1–2 minutes.
  3. Slowly whisk in broth.
  4. Simmer until thickened; season to taste.

Variations

  • Crispy oven-baked chicken instead of pan-fried
  • Garlic mashed potatoes (add roasted garlic)
  • Creamy mushroom gravy over chicken and potatoes
  • Slow cooker chicken served over mashed potatoes
