Here’s a simple and tasty recipe for Cheesy Mashed Potato Puffs—crispy on the outside, cheesy and soft on the inside. Perfect as a side dish or appetizer.


Cheesy Mashed Potato Puffs

Makes about 12–16 puffs

Ingredients:

  • 2 cups mashed potatoes (fresh or leftover)
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 1/4 cup all-purpose flour
  • 2 tablespoons chopped green onions (optional)
  • Salt and pepper, to taste
  • 2 tablespoons butter, melted (for brushing)
  • Optional: paprika or garlic powder for seasoning

Instructions

  1. Preheat oven:
    • 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix ingredients:
    • In a large bowl, combine mashed potatoes, cheddar, Parmesan, egg, flour, green onions, salt, and pepper. Mix until well combined.
  3. Form puffs:
    • Using a spoon or cookie scoop, form small balls (about 2 tablespoons each) and place on the prepared baking sheet.
    • Flatten slightly if desired for even baking.
  4. Optional topping:
    • Brush each puff with melted butter and sprinkle with paprika or garlic powder.
  5. Bake:
    • Bake 20–25 minutes, until golden brown and crispy on the outside.
  6. Serve:
    • Serve warm as a side dish, snack, or appetizer with your favorite dipping sauce.

✅ Tips:

  • Leftover mashed potatoes work perfectly and help hold the puffs together.
  • For extra crispiness, roll the puffs lightly in breadcrumbs before baking.
  • You can add cooked bacon bits, diced ham, or herbs for more flavor.
