Here’s an easy, crispy, delicious recipe for Cheesy Vegetable Fritters — perfect as a snack, side dish, or even breakfast!


⭐ Cheesy Vegetable Fritters

Makes: 10–12 fritters
Ready in: 20 minutes


Ingredients:

  • 2 cups grated vegetables
    (great options: zucchini, carrot, potato, corn, broccoli, or a mix)
  • 1/2 cup shredded cheddar or mozzarella
  • 1/4 cup grated Parmesan (optional but adds great flavor)
  • 2 large eggs
  • 1/2 cup flour (or 1/3 cup flour + 2 tbsp cornstarch for crispier fritters)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt & black pepper, to taste
  • 2–3 tablespoons oil for frying (vegetable or olive oil)

Optional add-ins:

  • Chopped green onion
  • Fresh herbs (parsley, dill)
  • Chili flakes for heat

Instructions:

1. Prep the vegetables

If using zucchini or potatoes, grate and squeeze out excess liquid using a clean towel or paper towels.
(This prevents soggy fritters.)

Add grated veggies to a mixing bowl.


2. Mix the batter

Add:

  • Cheddar
  • Parmesan
  • Eggs
  • Flour
  • Seasonings
  • Optional herbs

Mix until combined.
Batter should be thick enough to hold its shape — add a little more flour if needed.


3. Fry the fritters

  • Heat oil in a skillet over medium heat.
  • Scoop 2–3 tbsp batter per fritter into the hot pan.
  • Flatten slightly with a spatula.
  • Cook 3–4 minutes per side until golden brown and crispy.
  • Transfer to a paper towel–lined plate.

4. Serve

Delicious with:

  • Sour cream
  • Ranch
  • Garlic aioli
  • Sweet chili sauce
  • Greek yogurt dip

⭐ Tips for the Best Fritters

  • Removing moisture is key to crispiness, especially with zucchini.
  • Fry over medium, not high, heat so they cook through without burning.
  • Add corn for sweetness or jalapeño for heat.
  • Can be made gluten-free by using almond flour or a GF flour blend.
