Cheesy Taco Potatoes

Ingredients

  • 2 lbs potatoes, diced (Russet or Yukon Gold)
  • 1 lb ground beef
  • 1 packet taco seasoning (or homemade)
  • 1/2 cup water
  • 1 tbsp olive oil
  • Salt & pepper, to taste

🧀 Cheesy Topping

  • 1½–2 cups shredded cheddar or Mexican-blend cheese
  • 1/2 cup sour cream
  • 1/2 cup salsa

Optional Toppings

  • Green onions
  • Jalapeños
  • Diced tomatoes
  • Cilantro

Instructions

  1. Cook the Potatoes
    • Preheat oven to 425°F (220°C).
    • Toss diced potatoes with olive oil, salt, and pepper.
    • Spread on a baking sheet and roast 30–35 minutes, stirring once, until crispy and golden.
  2. Cook the Beef
    • While potatoes roast, brown ground beef in a skillet.
    • Drain excess grease.
    • Stir in taco seasoning and water. Simmer 5 minutes.
  3. Assemble
    • Reduce oven to 400°F (205°C).
    • Transfer roasted potatoes to a baking dish.
    • Top with seasoned beef, then sprinkle generously with cheese.
  4. Bake
    • Bake 10–15 minutes, until cheese is melted and bubbly.
  5. Finish & Serve
    • Drizzle with sour cream and salsa.
    • Add favorite toppings and serve hot.
