Here’s a soft, fluffy Cheesy Potato Roll—perfect for holidays, sliders, or alongside dinner 🧀🥔


Cheesy Potato Rolls

Ingredients

  • 1 cup warm milk (110°F)
  • 2¼ tsp active dry yeast (1 packet)
  • 2 tbsp sugar
  • ¾ cup mashed potatoes (plain, no butter added)
  • 4 tbsp unsalted butter, melted
  • 1 large egg
  • 1 tsp salt
  • 3½–4 cups all-purpose flour
  • 1½ cups shredded cheddar or Colby-Jack cheese
  • 2 tbsp butter, melted (for brushing)

Instructions

  1. Activate yeast
    • Stir yeast and sugar into warm milk.
    • Let sit 5–10 minutes until foamy.
  2. Make dough
    • Add mashed potatoes, melted butter, egg, and salt.
    • Mix in flour gradually until a soft dough forms.
    • Knead 6–8 minutes until smooth and elastic.
  3. First rise
    • Place dough in a greased bowl, cover, and let rise 1–1½ hours, until doubled.
  4. Add cheese & shape
    • Punch down dough and knead in shredded cheese.
    • Divide into 12–15 rolls and place in a greased baking dish.
  5. Second rise
    • Cover and let rise 30–45 minutes, until puffy.
  6. Bake
    • Preheat oven to 375°F (190°C).
    • Bake 18–22 minutes, until golden.
  7. Finish
    • Brush warm rolls with melted butter.
    • Cool slightly before serving.

Variations & Tips

  • 🧄 Add garlic powder or minced garlic
  • 🌿 Mix in chives or green onions
  • 🧀 Try mozzarella for extra pull
  • 🥔 Leftover mashed potatoes work great
  • ❄️ Freeze baked rolls; reheat at 300°F
