Cheesy Mashed Potato Muffins

Ingredients (makes 12 muffins)

  • 2 cups leftover mashed potatoes (or freshly made, cooled)
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • 2 large eggs
  • ¼ cup milk
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • Optional: ¼ cup chopped green onions, cooked bacon bits, or herbs for extra flavor

Instructions

1. Preheat oven

  • Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.

2. Prepare the batter

  1. In a large bowl, combine mashed potatoes, eggs, milk, salt, and pepper.
  2. Stir in shredded cheese and optional add-ins like green onions or bacon.

3. Fill the muffin tin

  • Spoon the mixture into the muffin cups, filling about ¾ full.

4. Bake

  • Bake for 20–25 minutes, until the tops are golden and slightly firm to the touch.

5. Serve

  • Let cool slightly before removing from the tin. Serve warm as a side dish or snack.

Tips:

  • Use cold leftover mashed potatoes for easier mixing.
  • Add a pinch of garlic powder or paprika for extra flavor.
  • These muffins can be made ahead and reheated in the oven or microwave.
