Ingredients (serves 4–6)

  • 500 g (1 lb) ground beef
  • 1 small onion, diced
  • 2–3 jalapeños, finely chopped (remove seeds for less heat)
  • 2 cloves garlic, minced
  • 1 cup cooked rice or cooked pasta (optional but filling)
  • 1 can (10.5 oz / 300 g) cream of mushroom or cream of chicken soup
  • ½ cup sour cream
  • 1½ cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 1 tbsp olive oil
  • Salt & black pepper, to taste
  • Optional toppings: crushed tortilla chips, green onions, extra cheese

Instructions

1. Preheat oven

  • Preheat to 180°C / 350°F
  • Grease a 9×13-inch baking dish.

2. Cook the beef

  1. Heat oil in a skillet over medium heat.
  2. Add onion and jalapeños; sauté 3–4 minutes.
  3. Add garlic and cook 30 seconds.
  4. Add ground beef and cook until browned. Drain excess fat.
  5. Season with salt and pepper.

3. Mix the casserole

  1. Stir in cream soup, sour cream, and cooked rice or pasta (if using).
  2. Fold in 1 cup shredded cheese.

4. Assemble

  • Spread mixture evenly in the baking dish.
  • Top with remaining cheese and optional toppings.

5. Bake

  • Bake uncovered 25–30 minutes until bubbly and golden.

6. Serve

  • Let rest 5 minutes before serving.

💡 Tips

  • For extra heat, add a pinch of cayenne or diced green chilies.
  • Swap beef for ground chicken or turkey if desired.
  • Add corn or black beans for a Tex-Mex twist.
