🍳 Cheesy Ground Beef Quesadilla

Ingredients (makes 2 quesadillas):

  • 1/2 lb (225g) ground beef
  • 1 tsp olive oil (optional)
  • 1/2 small onion, finely chopped
  • 1/2 tsp garlic powder or 1 clove garlic, minced
  • Salt and pepper to taste
  • 4 flour tortillas (medium size)
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • Optional: diced tomatoes, bell peppers, or jalapeños

🥄 Instructions

  1. Cook the beef:
    • Heat a skillet over medium heat.
    • Add olive oil (if using) and sauté onions until soft.
    • Add ground beef, garlic, salt, and pepper. Cook until browned and fully cooked. Drain excess fat.
  2. Assemble quesadillas:
    • Lay a tortilla flat. Sprinkle cheese, then spread cooked beef evenly on top.
    • Add optional veggies if desired.
    • Sprinkle a little more cheese and cover with a second tortilla.
  3. Cook the quesadilla:
    • Heat a clean skillet over medium heat.
    • Place the assembled quesadilla in the skillet.
    • Cook 2–3 minutes per side, pressing slightly, until the tortilla is golden brown and the cheese melts.
  4. Serve:
    • Slice into wedges and serve with salsa, sour cream, or guacamole.

💡 Tips:

  • Use medium-low heat if the tortilla browns too fast before the cheese melts.
  • For extra gooeyness, add more cheese inside and on top while cooking.
  • You can also toast in an oven at 180°C (350°F) for 10 minutes for multiple quesadillas at once.
