Easy, quick, and perfect as a snack or side.


Cheesy Corn Fritters

Ingredients

  • 1 cup corn kernels (fresh, frozen, or canned & drained)
  • ½ cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1 egg
  • ¼ cup all-purpose flour
  • 2 tbsp milk
  • 1–2 green onions, chopped (optional)
  • Salt & black pepper to taste
  • Optional: paprika or chili flakes
  • Oil for frying

Instructions

  1. In a bowl, mix corn, cheese, egg, flour, milk, and seasonings.
  2. Heat a thin layer of oil in a skillet over medium heat.
  3. Drop spoonfuls of batter into the pan; flatten slightly.
  4. Fry 2–3 minutes per side until golden and crisp.
  5. Drain on paper towels and serve hot.

  • 🍳 With a fried egg (great for breakfast)
  • 🥗 As a side dish
  • 🌮 In tacos
  • 🥣 With sour cream, yogurt, or chili sauce

Variations

  • 🌶️ Add jalapeños or green chilies
  • 🧄 Add garlic powder or minced garlic
  • 🌿 Add herbs like parsley or cilantro
  • 🥔 Add grated potato or zucchini for extra texture
