🧀🥦 Cheesy Broccoli Stuffed Chicken Breasts

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup broccoli, finely chopped (steamed & drained)
  • 1 cup shredded cheese (cheddar, mozzarella, or Colby-Jack)
  • 3 tbsp cream cheese (softened)
  • 1 clove garlic, minced
  • Salt & pepper
  • 1 tsp paprika or Italian seasoning
  • Olive oil or melted butter

Instructions

  1. Prep chicken:
    Cut a deep pocket into each chicken breast (don’t slice all the way through).
  2. Mix filling:
    Combine broccoli, shredded cheese, cream cheese, garlic, salt & pepper.
  3. Stuff:
    Spoon filling into each pocket. Secure with toothpicks if needed.
  4. Season:
    Rub chicken with oil or butter, sprinkle paprika/Italian seasoning, salt & pepper.
  5. Bake:
    Place in a baking dish and bake at 375°F (190°C) for 25–30 minutes, until chicken reaches 165°F.
  6. Rest 5 minutes, remove toothpicks, serve.
