Here’s a simple, cheesy, beefy taco pasta recipe you can make in one pot. Quick, comforting, and super flavorful!


🌮🧀 Cheesy Beef Taco Pasta

Ingredients (4 servings)

  • 1 lb (450 g) ground beef
  • 1 small onion, diced
  • 2–3 cloves garlic, minced
  • 1 packet taco seasoning (or 2 Tbsp homemade)
  • 2 cups beef broth
  • 1 can (10 oz) Rotel or diced tomatoes with green chiles
  • 8 oz (about 2 cups) uncooked pasta (shells, rotini, or elbows)
  • 1 cup shredded cheddar or Mexican blend cheese
  • ½ cup sour cream (optional but makes it creamy)
  • Salt & pepper to taste
  • Optional toppings: green onions, jalapeños, cilantro, crushed tortilla chips

Instructions

  1. Brown the beef
    In a large skillet or pot, cook ground beef over medium-high heat until browned. Drain excess fat.
  2. Add onion & garlic
    Cook for 2–3 minutes until softened and fragrant.

    Season with taco seasoning and stir.

  3. Add liquids & pasta
    Pour in beef broth and Rotel. Stir in the uncooked pasta.
    Bring to a simmer, cover, and cook for 12–15 minutes, stirring occasionally, until pasta is tender.
  4. Make it cheesy
    Lower heat. Stir in cheese until melted. Add sour cream for extra creaminess.
  5. Taste & adjust
    Add salt/pepper as needed.
  6. Serve hot with toppings like green onions, cilantro, or crushed tortilla chips.

Tips & Variations

  • Swap beef for ground turkey or chicken.
  • Add corn or black beans for extra bulk.
  • Use chipotle powder or jalapeños for heat.
  • For extra cheesiness, melt a little Velveeta in with the cheddar.
