Cheesy Bacon Potato Muffins

Ingredients (makes 12 muffins)

  • 2 cups mashed potatoes (about 2 large potatoes, cooked and mashed)
  • ½ cup all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup shredded cheddar cheese (plus extra for topping)
  • 4–5 slices cooked bacon, crumbled
  • 2 green onions, chopped
  • 2 eggs, beaten
  • 2 tbsp butter, melted

Instructions

  1. Preheat oven
    • 375°F (190°C) and grease a 12-cup muffin tin or line with paper liners.
  2. Mix the batter
    • In a large bowl, combine mashed potatoes, flour, baking powder, salt, and pepper.
    • Stir in cheese, bacon, green onions, eggs, and melted butter until well combined.
  3. Fill the muffin tin
    • Spoon mixture evenly into muffin cups.
    • Sprinkle a little extra cheese on top if desired.
  4. Bake
    • Bake 20–25 minutes until tops are golden brown and muffins are set.
  5. Serve warm
    • Perfect as a breakfast side, brunch treat, or snack.

Pro Tips

  • For extra flavor, mix in garlic powder, paprika, or chives.
  • You can substitute cheddar with pepper jack for a spicy kick.
  • Leftovers reheat well in the microwave or oven.
