“Cauliflower steaks” are thick slices cut from the center of a head of cauliflower, roasted or pan-seared until golden and tender. They can be a main dish or a hearty side.


⭐ Classic Roasted Cauliflower Steaks (Easy)

Ingredients (serves 2–3)

  • 1 large head of cauliflower
  • 3–4 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika (or regular paprika)
  • Salt & pepper
  • Optional: lemon juice, fresh herbs (parsley, thyme), grated parmesan, tahini sauce

Instructions

  1. Prep the Cauliflower
    • Remove leaves.
    • Trim just enough of the stem so it sits flat.
    • Slice into 1–1œ inch thick slabs (usually 2–3 “steaks” from one head).
  2. Season
    • Brush both sides generously with olive oil.
    • Sprinkle with salt, pepper, garlic powder, and paprika.
  3. Roast
    • Preheat oven to 425°F (220°C).
    • Place steaks on a parchment-lined sheet.
    • Roast 15 minutes, flip, roast another 12–15 minutes until golden with crispy edges.
  4. Finish
    • Squeeze lemon over top.
    • Add herbs, parmesan, or drizzle tahini/green sauce if desired.

1. Parmesan Crusted

Mix olive oil + minced garlic + grated parmesan. Brush on for the last 10 minutes of roasting.

2. Spicy Harissa or Chili Lime

Rub steaks with harissa paste or chili + lime zest before roasting.

3. Balsamic Glazed

Drizzle with balsamic reduction in the final 5 minutes.

4. Pan-Seared + Oven Finish

Sear in a hot cast-iron skillet until browned (3–4 min/side), then finish in the oven at 400°F for 10–12 minutes.

5. Vegan “Steakhouse” Style

Brush with a marinade of olive oil, soy sauce, smoked paprika, and a little maple syrup; roast until deeply caramelized.
