Cauliflower cheese

Here’s a proper, classic cauliflower cheese—creamy, deeply savory, and beautifully golden on top. Simple, comforting, and very hard to beat.


🧀 Classic Cauliflower Cheese

Ingredients (serves 4)

  • 1 large cauliflower, cut into florets
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk, warm
  • 1 tsp Dijon mustard
  • 1 cup sharp cheddar, grated
  • ½ cup Gruyère (or more cheddar), grated
  • Salt & black pepper
  • Optional: pinch of nutmeg

Topping (optional but excellent)

  • ½ cup grated cheddar
  • ¼ cup breadcrumbs
  • 1 tbsp melted butter

Instructions

  1. Cook the cauliflower
    Boil florets in well-salted water for 5–6 minutes, just tender.
    Drain very well (important so it doesn’t get watery).
  2. Make the cheese sauce
    Melt butter in a saucepan over medium heat.
    Stir in flour and cook 1 minute.
    Gradually whisk in warm milk until smooth and thick.
    Stir in mustard, cheese, salt, pepper, and nutmeg (if using).
    Remove from heat.
  3. Assemble
    Place cauliflower in a buttered baking dish.
    Pour over cheese sauce, coating evenly.
  4. Top & bake
    Mix topping ingredients and sprinkle over.
    Bake at 400°F / 200°C for 20–25 minutes until bubbling and golden.
  5. Rest & serve
    Let sit 5 minutes before serving—it thickens perfectly.

  • Sharp cheddar gives real flavor
  • Drain cauliflower well to avoid thin sauce
  • Mustard + nutmeg add depth without tasting obvious
  • Bake hot for browning without overcooking

Variations

  • Extra indulgent: Add 2 tbsp cream cheese to sauce
  • British pub style: Add a splash of Worcestershire sauce
  • Cauliflower cheese with bacon: Stir in crispy bacon pieces
  • One-pot stovetop version: Skip baking, serve straight from pan
  • Veg boost: Add leeks or spinach
