Here’s a delicious Carrot Cake Roll — a soft, spiced carrot cake rolled around creamy cream cheese frosting. Perfect for a festive dessert or special treat! 🥕🍰


🥕 Carrot Cake Roll

Serves: 8–10

Bake Time: 15–18 minutes

Ingredients

For the cake:

  • 3/4 cup (95 g) all-purpose flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1 tsp ground cinnamon

  • 1/2 tsp ground nutmeg

  • 1/4 tsp ground ginger (optional)

  • 3 large eggs

  • 1 cup (200 g) sugar

  • 1/2 cup (120 ml) vegetable oil

  • 1 tsp vanilla extract

  • 1 cup (100 g) grated carrots

  • 1/2 cup (50 g) chopped walnuts or pecans (optional)

For the cream cheese filling:

  • 8 oz (225 g) cream cheese, softened

  • 1/4 cup (60 g) unsalted butter, softened

  • 1 cup (120 g) powdered sugar

  • 1 tsp vanilla extract


Instructions

1. Prepare the cake

  1. Preheat oven to 375°F (190°C).

  2. Line a 10×15-inch jelly roll pan with parchment paper; lightly grease.

  3. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.

  4. In a separate bowl, beat eggs, sugar, oil, and vanilla until smooth.

  5. Fold dry ingredients into wet ingredients until just combined.

  6. Stir in grated carrots and nuts (if using).


2. Bake the cake

  • Pour batter into prepared pan and spread evenly.

  • Bake 15–18 minutes until the cake springs back when touched.


3. Roll the cake

  1. While still warm, turn the cake out onto a clean kitchen towel dusted with powdered sugar.

  2. Carefully peel off parchment paper.

  3. Starting from a short side, roll the cake with the towel inside. Let cool completely rolled up.


4. Prepare the filling

  • Beat cream cheese, butter, powdered sugar, and vanilla until smooth and creamy.


5. Assemble the roll

  1. Unroll the cooled cake carefully.

  2. Spread cream cheese filling evenly over the surface.

  3. Roll the cake again (without the towel).

  4. Chill for at least 30 minutes before slicing.


💡 Tips

  • Prevent cracking: Roll the cake while warm and let it cool rolled.

  • Extra flavor: Add a pinch of orange zest to the filling for a citrusy twist.

  • Decorating: Dust the top with powdered sugar or drizzle with melted white chocolate.
