Carrot cake

Here’s a perfect, classic carrot cake — ultra-moist, warmly spiced, and topped with silky cream cheese frosting. This is the kind of carrot cake that wins people over every time.


🥕 Classic Carrot Cake (Super Moist & Flavorful)

Ingredients

For the cake:

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger (optional, but great)
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 tsp vanilla extract
  • 3 cups grated carrots (4–5 medium carrots)
  • 1 cup crushed pineapple, drained (optional but adds moisture)
  • 1 cup chopped walnuts or pecans (optional)
  • ½ cup shredded coconut (optional)

For the cream cheese frosting:

  • 8 oz cream cheese, softened
  • ½ cup (1 stick) unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract
  • Pinch of salt

⭐ Instructions

1. Prepare the pans

Preheat oven to 350°F (175°C).
Grease and line two 9-inch round cake pans or one 9×13-inch pan.


2. Mix the dry ingredients

In a medium bowl, whisk together:
flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.


3. Mix the wet ingredients

In a large bowl, whisk together:
oil, granulated sugar, brown sugar, eggs, and vanilla until smooth.


4. Combine

Add dry ingredients into the wet mixture and stir until just combined.
Fold in grated carrots, pineapple, and nuts/coconut (if using).


5. Bake

Pour batter into prepared pans.
Bake for 30–35 minutes (round pans) or 40–45 minutes (9×13 pan).
Cake is done when a toothpick comes out clean.

Let cool completely before frosting.


⭐ 6. Make the frosting

Beat cream cheese and butter until creamy.
Slowly add powdered sugar, then vanilla and salt.
Mix until smooth and spreadable.


7. Frost the cake

Layer and frost as desired.
Top with extra nuts or a sprinkle of cinnamon if you like.

  • Use freshly grated carrots — pre-shredded ones are too dry.
  • Pineapple adds moisture without making the cake taste like pineapple.
  • Let the cake rest overnight for even better flavor.
  • For extra decadence, add raisins or a splash of orange zest.
