Caramelized Onion & Beef Bacon Quiche

Ingredients (9-inch quiche)

For the crust

  • 1 9-inch pie crust (store-bought or homemade)

For the filling

  • 6–8 slices beef bacon, chopped
  • 2 large onions, thinly sliced
  • 3 large eggs
  • 1 cup heavy cream (or half-and-half for lighter version)
  • 1 cup shredded cheese (Gruyère, cheddar, or Swiss)
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp nutmeg (optional, for depth)
  • 1–2 tsp olive oil or butter

Instructions

  1. Prep crust
    • Preheat oven to 375°F (190°C).
    • Place pie crust in a 9-inch quiche or pie pan. Prick bottom with a fork.
    • Optional: blind bake for 8–10 minutes for a crisper bottom.
  2. Caramelize onions
    • In a skillet, heat oil/butter over medium-low.
    • Add sliced onions and cook, stirring occasionally, 20–25 minutes until golden brown and sweet.
    • Season lightly with salt and pepper.
  3. Cook bacon
    • In a separate skillet, cook beef bacon until crisp. Drain excess fat.
  4. Prepare custard
    • In a bowl, whisk eggs, cream, salt, pepper, and nutmeg.
  5. Assemble quiche
    • Spread caramelized onions evenly over the crust.
    • Sprinkle cooked beef bacon on top.
    • Add shredded cheese evenly.
    • Pour egg/cream mixture over everything.
  6. Bake
    • Bake 35–45 minutes, until the custard is set but slightly jiggly in the center.
    • Let cool 10 minutes before slicing.
