Here’s a classic Canadian-style Cheddar Cheese Soup—rich, comforting, and perfect for cold weather 🇨🇦🧀


Canadian Cheddar Cheese Soup

Ingredients (serves 4–6)

  • 3 tbsp butter
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • ¼ cup all-purpose flour
  • 3 cups chicken or vegetable broth
  • 2 cups milk (or half-and-half for richer soup)
  • 2 cups sharp Canadian cheddar, freshly grated
  • 1 medium carrot, grated (optional but traditional)
  • ½ tsp dry mustard or Dijon mustard
  • Salt and black pepper, to taste
  • Pinch of paprika or cayenne (optional)

Optional Canadian touches

  • ½ cup light beer or ale
  • 2 tbsp maple syrup (very subtle sweetness)

Instructions

  1. Sauté aromatics
    Melt butter in a pot over medium heat. Add onion and cook until soft (5–7 min). Add garlic and cook 30 seconds.
  2. Make a roux
    Stir in flour and cook for 1–2 minutes, stirring constantly.
  3. Build the soup
    Slowly whisk in broth, then milk. Bring to a gentle simmer until slightly thickened.
  4. Add flavor
    Stir in carrot, mustard, paprika, salt, and pepper. Simmer 5 minutes.
  5. Add cheese
    Lower heat. Add cheddar a handful at a time, stirring until melted and smooth.
    (Do not boil after adding cheese.)
  6. Adjust & serve
    Taste and adjust seasoning. Thin with more milk if needed.

  • Topped with croutons, crispy bacon, or chives
