Here’s a flavorful, tender Buttermilk Marinated Chicken Drumsticks recipe — super easy and great for baking, grilling, or air-frying!


🍗 Buttermilk Marinated Chicken Drumsticks

Ingredients

  • 2 lbs chicken drumsticks (about 8–10)
  • 1 ½ cups buttermilk
  • 2 tbsp olive oil
  • 1 tbsp hot sauce (optional, for tenderizing + flavor)
  • 1 ½ tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp dried thyme (or oregano)
  • Optional: 2–3 crushed garlic cloves

Instructions

1. Marinate

  1. Pat the drumsticks dry.
  2. In a large bowl or zip-top bag, combine:
    buttermilk, olive oil, hot sauce, salt, pepper, paprika, garlic powder, onion powder, thyme, and optional garlic.
  3. Add the drumsticks and coat well.
  4. Marinate at least 4 hours, preferably overnight (8–24 hrs) for best tenderness.

2. Cook (Choose Your Method)

Oven-Baked

  1. Preheat oven to 425°F (220°C).
  2. Line a baking sheet with foil and place a wire rack on top (optional but helps crisp).
  3. Shake off excess marinade and arrange drumsticks.
  4. Bake 35–45 minutes, flipping halfway, until they reach 165°F (74°C) and the skin is brown and crispy.

Air Fryer

  • 400°F for 20–25 minutes, shaking/flipping halfway.

Grill

  • Medium-high heat, 20–25 minutes, turning every 5 minutes until charred and cooked through.

Tips for Extra Flavor

  • Add 1–2 tsp Cajun seasoning for a spicy version.
  • For a sweeter BBQ profile, brush with your favorite sauce during the last 5–10 minutes of cooking.
  • Don’t wash the marinade off—just let excess drip off. It helps with browning.
