🍖 Homemade Breakfast Sausage Patties

Ingredients

Makes about 8 patties

  • 1 lb (450 g) ground pork (or a mix of pork and turkey for leaner version)

  • 1 tsp salt

  • ½ tsp black pepper

  • ½ tsp dried sage

  • ½ tsp dried thyme

  • ½ tsp smoked paprika (optional, adds depth)

  • ¼ tsp red pepper flakes or cayenne (optional, for a bit of heat)

  • 1 tsp brown sugar or maple syrup (optional, for sweetness)

  • 1 small clove garlic, minced (optional)

  • 1–2 tbsp cold water (helps bind the meat)


Instructions

1. Mix the sausage

  1. In a bowl, combine all ingredients with the ground pork.

  2. Mix gently with your hands or a spoon until just combined — don’t overwork, or it will get tough.

2. Shape into patties

  • Divide mixture into 8 equal portions.

  • Shape each portion into a 2–3 inch round patty, about ½ inch thick.

3. Cook

Option A — Stove:

  1. Heat a skillet over medium heat.

  2. Add patties (no oil needed if using fatty pork).

  3. Cook 3–4 minutes per side, until browned and cooked through (internal temp 160°F / 71°C).

Option B — Oven:

  1. Preheat oven to 400°F (200°C).

  2. Place patties on a parchment-lined baking sheet.

  3. Bake 15–20 minutes, flipping halfway, until cooked through.


🌿 Tips

  • For links, shape the mixture into small logs and wrap in parchment before twisting ends.

  • Can be made ahead and frozen raw — just thaw and cook.

  • Swap pork for chicken or turkey for a leaner sausage.

  • Add a touch of maple syrup or apple for a slightly sweet breakfast sausage, like what you find in diners.
