Bourbon Glazed Meatloaf

🥃 Bourbon Glazed Meatloaf

Ingredients

For the Meatloaf

  • 1 ½ lbs ground beef (80/20 works best)
  • ½ lb ground pork (optional but recommended)
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • ¾ cup breadcrumbs
  • 2 large eggs
  • ½ cup milk
  • 2 tbsp Worcestershire sauce
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper

For the Bourbon Glaze

  • ½ cup ketchup
  • ¼ cup brown sugar
  • ¼ cup bourbon
  • 1 tbsp apple cider vinegar
  • 1 tbsp Worcestershire sauce
  • ½ tsp smoked paprika
  • Pinch of cayenne (optional)

Instructions

1. Preheat

Preheat oven to 350°F (175°C). Line a baking sheet with foil or lightly grease a loaf pan.

2. Mix the Meatloaf

In a large bowl, combine:

  • ground beef + pork
  • onion
  • garlic
  • breadcrumbs
  • eggs
  • milk
  • Worcestershire
  • ketchup
  • Dijon
  • paprika, salt, pepper

Mix until just combined (don’t overwork the meat).

3. Shape & Bake

Shape into a loaf on the baking sheet or pack lightly into a loaf pan.
Bake for 40 minutes.

4. Make the Bourbon Glaze

While it bakes, stir together glaze ingredients in a small saucepan.
Simmer 5–7 minutes until glossy and slightly thickened.

5. Glaze & Finish Baking

Brush half the glaze over the meatloaf.
Return to oven for 20–25 minutes more, brushing with more glaze halfway through.

Internal temperature should reach 160°F (71°C).

6. Rest & Serve

Let rest 10 minutes, then slice. Serve with extra glaze.
