Ingredients

Instructions

  1. Preheat oven:
    Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans (or line with parchment paper).
  2. Mix dry ingredients:
    In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. Mix wet ingredients:
    In a large bowl, beat oil, granulated sugar, and brown sugar until combined. Add eggs one at a time, then vanilla.
  4. Combine batter:
    Gradually add dry ingredients to wet ingredients, mixing just until incorporated. Fold in grated carrots, pineapple, nuts, and coconut if using.
  5. Bake the cake:
    Divide batter evenly between prepared pans. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  6. Make the frosting:
    Beat cream cheese and butter until smooth. Gradually add powdered sugar, then vanilla, until creamy and spreadable.
  7. Assemble:
    Place one cake layer on a serving plate, spread frosting on top, then place the second layer. Frost the top and sides. Decorate with chopped nuts or carrot decorations if desired.
