Ingredients

For the Stroganoff

  • 1 lb (450 g) beef sirloin or tenderloin, thinly sliced
  • 2 tbsp olive oil or butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz (225 g) mushrooms, sliced
  • 1 tsp paprika
  • Salt & black pepper, to taste
  • 1 cup beef broth
  • 1 tsp Dijon mustard
  • ½ cup sour cream (room temperature)
  • 2 tbsp all-purpose flour (optional, for thickening)

For the Noodles

  • 8 oz (225 g) egg noodles
  • Salt, for boiling water

Instructions

1. Cook the Noodles

  1. Boil egg noodles in salted water according to package instructions.
  2. Drain and set aside.

2. Cook the Beef

  1. Heat oil or butter in a large skillet over medium-high heat.
  2. Sear beef slices quickly until browned but not fully cooked (1–2 minutes per side). Remove and set aside.

3. Cook Vegetables

  1. In the same skillet, add onions and garlic; sauté 2–3 minutes until soft.
  2. Add mushrooms and paprika; cook until mushrooms release moisture and soften, about 5 minutes.

4. Make the Sauce

  1. Stir in flour (if using) and cook 1 minute.
  2. Add beef broth and Dijon mustard; bring to a simmer until slightly thickened.
  3. Reduce heat to low, stir in sour cream, and return beef to the pan.
  4. Heat gently until beef is cooked through and sauce is creamy.

5. Combine & Serve

  • Serve beef stroganoff over cooked egg noodles.
  • Optional: garnish with fresh parsley or a sprinkle of paprika.

Tips & Variations

  • Mushroom Lovers: Use a mix of cremini and shiitake mushrooms for deeper flavor.
  • Creamier Sauce: Add ¼ cup heavy cream with the sour cream.
  • Slow Cooker Version: Brown beef first, then add onions, mushrooms, broth, and seasonings; cook on low 4–6 hours, then stir in sour cream before serving.
  • Make Ahead: Sauce can be made ahead; reheat gently and serve over freshly cooked noodles.
