Here’s a delicious Banana Caramel Pudding recipe — creamy, sweet, and full of rich caramel flavor! 🍌🍮


🍌 Banana Caramel Pudding Recipe

Ingredients

For the caramel sauce:

  • 1 cup granulated sugar

  • ¼ cup water

  • ½ cup heavy cream (warm)

  • 2 tbsp unsalted butter

  • Pinch of salt

For the pudding:

  • 2 cups whole milk

  • ½ cup heavy cream

  • ½ cup brown sugar

  • 3 tbsp cornstarch

  • 3 egg yolks

  • 2 tbsp unsalted butter

  • 1 tsp vanilla extract

  • 2 ripe bananas, mashed

For layering/topping:

  • 2–3 bananas, sliced

  • Whipped cream (optional)

  • Crushed vanilla wafers or biscuit crumbs (optional)


Instructions

1. Make the caramel sauce:

  1. In a heavy saucepan, combine sugar and water.

  2. Heat over medium heat without stirring until it turns a deep amber color.

  3. Remove from heat and carefully whisk in warm cream (it will bubble up).

  4. Stir in butter and salt. Let it cool slightly.

2. Prepare the pudding:

  1. In a medium bowl, whisk together brown sugar, cornstarch, and egg yolks.

  2. In a saucepan, heat milk and cream over medium heat until warm (not boiling).

  3. Slowly pour a little warm milk into the egg mixture, whisking constantly (to temper the eggs).

  4. Pour the mixture back into the saucepan and cook over medium heat, stirring constantly, until thickened (5–7 minutes).

  5. Remove from heat, stir in butter, vanilla, and mashed bananas.

  6. Let it cool slightly, then fold in half of the caramel sauce.

3. Assemble:

  • Layer pudding, banana slices, and crushed wafers in serving dishes.

  • Drizzle remaining caramel sauce on top.

  • Chill for at least 2 hours.

4. Serve:

  • Top with whipped cream, extra banana slices, and a final drizzle of caramel.
