Ingredients (serves 2–4)

  • 2 salmon fillets (6–8 oz each)
  • 1 bunch asparagus, trimmed
  • 3 tbsp unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice (freshly squeezed)
  • 1 tsp lemon zest
  • Salt and pepper, to taste
  • Optional: fresh herbs like parsley, dill, or thyme

Instructions

1. Preheat oven

  • Preheat oven to 400°F (200°C).

2. Prepare foil packets

  1. Cut two large sheets of aluminum foil.
  2. Place a salmon fillet in the center of each sheet.
  3. Arrange asparagus spears alongside the salmon.

3. Make lemon-garlic butter sauce

  • In a small bowl, mix melted butter, minced garlic, lemon juice, lemon zest, salt, and pepper.
  • Pour evenly over the salmon and asparagus.

4. Seal the foil

  • Fold the foil over the salmon and asparagus, sealing edges tightly to make a packet.

5. Bake

  • Place foil packets on a baking sheet and bake for 15–20 minutes (depending on thickness of salmon) until salmon flakes easily with a fork.

6. Serve

  • Carefully open packets (watch out for hot steam).
  • Garnish with fresh herbs if desired and serve immediately.

Tips

  • Even cooking: Make sure salmon fillets are roughly the same thickness.
  • Optional extras: Add thin lemon slices on top of salmon for extra flavor.
  • Low-carb & healthy: This meal is naturally low-carb and keto-friendly.
