🦐 Baked Potatoes with Shrimp

Ingredients (Serves 2–4)

For the Potatoes:

  • 4 large russet potatoes

  • Olive oil or melted butter

  • Salt

For the Shrimp Topping:

  • 1 lb (450 g) shrimp, peeled and deveined

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 3 garlic cloves, minced

  • ½ cup heavy cream (or half-and-half)

  • ¼ cup grated Parmesan cheese

  • 1 tbsp lemon juice

  • 1 tsp Old Bay or Cajun seasoning (optional, for flavor)

  • Salt and black pepper, to taste

  • 2 tbsp chopped parsley (for garnish)


Instructions

1. Bake the Potatoes:

  1. Preheat oven to 400°F (200°C).

  2. Scrub potatoes clean, then rub each with olive oil or butter and sprinkle with salt.

  3. Pierce a few times with a fork.

  4. Bake directly on the oven rack (or on a baking sheet) for 50–60 minutes, until tender.

  5. When done, cut a slit down the middle of each and fluff the inside with a fork.


2. Cook the Shrimp:

  1. While potatoes bake, heat butter and olive oil in a skillet over medium heat.

  2. Add garlic and cook for about 30 seconds until fragrant.

  3. Add shrimp, season with salt, pepper, and Old Bay or Cajun seasoning.

  4. Cook 2–3 minutes per side until pink and just cooked through.

  5. Remove shrimp and set aside.


3. Make the Creamy Sauce:

  1. In the same skillet, pour in cream and Parmesan.

  2. Stir and simmer for 2–3 minutes until slightly thickened.

  3. Add lemon juice and adjust seasoning to taste.

  4. Return shrimp to the sauce and toss to coat.


4. Assemble:

  1. Place each baked potato on a plate.

  2. Gently open and fluff the inside.

  3. Spoon the creamy shrimp mixture over the top.

  4. Garnish with chopped parsley and extra Parmesan if desired.


💡 Variations

  • Spicy Cajun Style: Add a pinch of cayenne or use blackened shrimp.

  • Garlic Butter Only: Skip the cream and toss shrimp in garlic butter and lemon juice for a lighter version.

  • Loaded Style: Add shredded cheese, bacon bits, and green onions under the shrimp topping for a decadent twist.
