Here’s a simple and delicious recipe for Baked Cottage Cheese Eggs—a protein-packed, creamy, and satisfying breakfast or brunch dish.


Ingredients (serves 2)

  • 4 large eggs
  • ½ cup (120g) cottage cheese
  • 2–3 tbsp milk (optional, for creamier texture)
  • Salt and pepper, to taste
  • 1 tsp fresh herbs (chives, parsley, or dill), chopped
  • Optional add-ins: diced tomatoes, spinach, bell peppers, or cooked bacon

Instructions

  1. Preheat the oven:
    • 375°F (190°C).
    • Grease a small baking dish or individual ramekins with butter or cooking spray.
  2. Prepare the cottage cheese mixture:
    • In a bowl, mix cottage cheese, milk (if using), salt, pepper, and any herbs or add-ins.
  3. Add the eggs:
    • Crack the eggs into the baking dish or divide among ramekins.
    • Spoon the cottage cheese mixture around and slightly over the eggs, leaving the yolks mostly exposed if desired.
  4. Bake:
    • Bake for 15–20 minutes, or until the eggs are set to your liking (less time for runny yolks, more for fully set).
  5. Serve:
    • Sprinkle with extra herbs or a little grated cheese if desired.
    • Serve warm with toast, avocado, or roasted vegetables.

This dish is creamy, protein-rich, and versatile—you can switch up vegetables, spices, or cheese depending on what you have on hand.
