Here’s an easy, comforting Baked Cheesy Potato 🥔🧀—crispy outside, fluffy inside, loaded with melty cheese:


🧀 Baked Cheesy Potato

Ingredients (serves 1–2)

  • 1 large russet potato
  • 1–2 tsp olive oil
  • Salt & black pepper, to taste
  • ½–1 cup shredded cheese (cheddar, mozzarella, or a blend)
  • 1 tbsp butter (optional)
  • Optional toppings: sour cream, bacon bits, green onions, chives

Instructions

1. Bake the potato

  1. Preheat oven to 220°C / 425°F.
  2. Scrub potato clean, pat dry, and pierce several times with a fork.
  3. Rub with olive oil and sprinkle with salt.
  4. Bake directly on the oven rack 45–60 minutes until tender.

2. Add the cheese

  1. Remove potato from oven and slice open lengthwise.
  2. Fluff the inside with a fork.
  3. Add butter (if using) and stuff with shredded cheese.

3. Melt & finish

  • Return potato to oven 5–10 minutes until cheese is fully melted and bubbly.

4. Serve

  • Add your favorite toppings and enjoy hot.

💡 Tips

  • For extra crispy skin, rub with oil and coarse salt before baking.
  • Mix cheese into the potato flesh for extra creaminess.
  • Microwave shortcut: microwave potato 6–8 minutes, then oven-bake 10 minutes for crisp skin.
