Here’s a bright, creamy, and dreamy Baby Lemon Impossible Pie — a mini version of the classic “impossible pie,” with a delicate lemon custard that magically forms a crust as it bakes. 🍋🥧✨


🍋 Baby Lemon Impossible Pies

Makes: 6–8 mini pies (muffin-sized)

Ingredients

For the Filling

  • 1 (14 oz / 397 g) can sweetened condensed milk
  • ¾ cup (180 ml) whole milk
  • 4 large eggs
  • ¼ cup (50 g) sugar (optional, for extra sweetness)
  • ¼ cup (30 g) all-purpose flour
  • 3 tbsp fresh lemon juice (or more for stronger lemon flavor)
  • 1 tsp lemon zest
  • Pinch of salt

Optional Topping

  • Powdered sugar for dusting
  • Whipped cream

Instructions

1. Preheat Oven

  • Preheat to 350°F (175°C).
  • Grease a muffin tin or line with paper liners for mini pies.

2. Make the Batter

  1. In a blender (or bowl with whisk), combine sweetened condensed milk, whole milk, eggs, sugar, flour, lemon juice, lemon zest, and salt.
  2. Blend until smooth and creamy.

3. Bake

  1. Pour batter into prepared muffin cups, filling about ¾ full.
  2. Bake 35–40 minutes, or until tops are lightly golden and a toothpick comes out mostly clean.
  3. The batter will magically separate: custard rises to the top, and a light cake-like layer forms on the bottom — that’s why it’s called “impossible pie.”

4. Cool and Serve

  • Let mini pies cool for 10–15 minutes in the pan, then remove to a wire rack.
  • Chill in the fridge 1–2 hours for firmer slices (optional).
  • Dust with powdered sugar or top with whipped cream before serving.

Tips

  • For extra tangy flavor, increase lemon juice to 4–5 tbsp.
  • Make sure eggs and milk are room temperature for smoother custard.
  • Can also be baked as a single 9-inch pie; bake 40–50 minutes.

Variations

  • Key Lime Version: Swap lemon juice & zest with key lime juice & zest.
  • Coconut Lemon: Add ¼ cup shredded coconut to the batter.
  • Mini Tart Shells: Bake batter in pre-made mini tart shells for a fancier presentation.
