Apple Oatmeal Bake

Ingredients (serves 4–6)

  • 2 cups old-fashioned oats
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 2 cups milk (dairy or non-dairy)
  • 2 large eggs
  • ¼ cup maple syrup or honey
  • 2 tsp vanilla extract
  • 2 medium apples, peeled, cored, and chopped
  • 2 tbsp melted butter or coconut oil
  • Optional toppings: chopped nuts, raisins, or extra cinnamon

Instructions

1. Preheat oven

  • Preheat oven to 350°F (175°C) and lightly grease an 8×8-inch (20×20 cm) baking dish.

2. Mix dry ingredients

  • In a large bowl, combine oats, baking powder, cinnamon, and salt.

3. Mix wet ingredients

  • In another bowl, whisk together milk, eggs, maple syrup (or honey), vanilla extract, and melted butter.

4. Combine and add apples

  • Pour the wet mixture into the oats and stir until combined.
  • Fold in chopped apples.

5. Bake

  • Pour mixture into prepared baking dish.
  • Bake for 35–40 minutes, until the top is golden and the oatmeal is set.

6. Serve

  • Let cool slightly before serving.
  • Optional: drizzle with extra maple syrup or sprinkle with nuts.

Tips:

  • For extra flavor, sauté apples with a pinch of cinnamon and nutmeg before adding to the mixture.
  • You can add ½ cup raisins, dried cranberries, or chopped nuts for more texture.
  • This bake stores well in the fridge for 3–4 days and can be reheated for a quick breakfast.
