Here’s a straightforward and delicious option: Spaghetti Aglio e Olio (garlic and oil spaghetti). It’s quick, classic, and uses simple ingredients.


Ingredients (serves 2–3)

  • 200g spaghetti

  • 4 cloves garlic, thinly sliced

  • 1/4 cup extra virgin olive oil

  • 1/2 teaspoon chili flakes (adjust to taste)

  • Salt, to taste

  • Fresh parsley, chopped (optional)

  • Grated Parmesan (optional)


Instructions

  1. Cook the pasta: Boil spaghetti in salted water until al dente. Reserve 1/2 cup of pasta water before draining.

  2. Sauté garlic: In a large pan, heat olive oil over medium heat. Add garlic and chili flakes. Cook until garlic is golden (not burnt!).

  3. Combine: Add the drained spaghetti to the pan, tossing to coat with the garlic oil. Add a splash of reserved pasta water if it seems dry.

  4. Season: Add salt to taste. Toss in parsley and sprinkle with Parmesan if desired.

  5. Serve immediately while hot.
