Here’s a copycat Girl Scouts SamoasĀ® (Caramel deLitesĀ®) cookie recipe—crispy, chewy, chocolatey, and coconut-caramel perfection.


Homemade Samoas Cookies (Copycat)

Ingredients

Cookies

  • 1 cup unsalted butter, softened
  • ½ cup sugar
  • 1 egg
  • ½ tsp vanilla
  • 2 cups all-purpose flour
  • ¼ tsp salt

Topping

  • 3 cups shredded coconut (sweetened)
  • 12 oz soft caramels (about 1 bag)
  • 3 tbsp milk
  • 8 oz semi-sweet chocolate chips

Instructions

1. Make the Cookies

  1. Preheat oven to 350°F (175°C).
  2. Cream butter and sugar until fluffy.
  3. Beat in egg and vanilla.
  4. Mix in flour and salt until dough forms.
  5. Roll dough to ¼-inch thick.
  6. Cut rounds and punch a hole in the center (like a donut).
  7. Bake 10–12 minutes until lightly golden. Cool completely.

2. Toast the Coconut

  • Spread coconut on a baking sheet.
  • Toast at 350°F for 8–10 minutes, stirring often, until golden.

3. Caramel Coconut Topping

  1. Melt caramels with milk over low heat, stirring constantly.
  2. Stir toasted coconut into caramel.
  3. Spoon and spread mixture over cooled cookies.

4. Chocolate Finish

  1. Melt chocolate chips.
  2. Dip bottoms of cookies into chocolate.
  3. Drizzle chocolate over the tops.
  4. Chill until set.
