Homemade Samoas Cookies (Copycat)
Ingredients
Cookies
- 1 cup unsalted butter, softened
- ½ cup sugar
- 1 egg
- ½ tsp vanilla
- 2 cups all-purpose flour
- ¼ tsp salt
Topping
- 3 cups shredded coconut (sweetened)
- 12 oz soft caramels (about 1 bag)
- 3 tbsp milk
- 8 oz semi-sweet chocolate chips
Instructions
1. Make the Cookies
- Preheat oven to 350°F (175°C).
- Cream butter and sugar until fluffy.
- Beat in egg and vanilla.
- Mix in flour and salt until dough forms.
- Roll dough to ¼-inch thick.
- Cut rounds and punch a hole in the center (like a donut).
- Bake 10ā12 minutes until lightly golden. Cool completely.
2. Toast the Coconut
- Spread coconut on a baking sheet.
- Toast at 350°F for 8ā10 minutes, stirring often, until golden.
3. Caramel Coconut Topping
- Melt caramels with milk over low heat, stirring constantly.
- Stir toasted coconut into caramel.
- Spoon and spread mixture over cooled cookies.
4. Chocolate Finish
- Melt chocolate chips.
- Dip bottoms of cookies into chocolate.
- Drizzle chocolate over the tops.
- Chill until set.
