Here’s a classic, flavorful recipe for Italian sausage with peppers and onions—perfect for sandwiches, over pasta, or just on its own:


Ingredients (Serves 4)

  • 1 lb (450 g) Italian sausages (mild, sweet, or hot, depending on preference)
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 2–3 bell peppers (any color), sliced
  • 2–3 cloves garlic, minced
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1/2 tsp crushed red pepper flakes (optional, for heat)
  • 1/4 cup tomato sauce or chicken broth (optional, for a saucier dish)
  • Fresh parsley, chopped (for garnish)
  • Hoagie rolls or crusty bread (optional, for serving)

Instructions

  1. Cook the sausages:
    • In a large skillet, heat 1 tbsp olive oil over medium heat.
    • Add the sausages and brown them on all sides (about 6–8 minutes).
    • Remove the sausages and set aside.
  2. Cook the vegetables:
    • In the same skillet, add the remaining 1 tbsp olive oil.
    • Add sliced onions and bell peppers. Sauté for 5–7 minutes until softened.
    • Add minced garlic, salt, pepper, and red pepper flakes. Cook for 1 more minute.
  3. Combine and simmer:
    • Slice the sausages into pieces (optional) and return them to the skillet.
    • If you want a little sauce, add 1/4 cup tomato sauce or broth.
    • Cover and simmer for 10 minutes on low heat until sausages are fully cooked and flavors meld.
  4. Serve:
    • Garnish with chopped parsley.
    • Serve on a plate, over pasta, or in hoagie rolls for sandwiches.

  • For a slightly smoky flavor, you can roast the peppers and onions in the oven instead of sautéing.
  • Use a mix of red, yellow, and green peppers for a colorful presentation.
  • Sweet or mild sausages pair well with softer peppers; hot sausages pair nicely with green or spicy peppers.
