Pork Rib with Red Bean Curd Sauce

Here’s a flavorful recipe for Pork Ribs with Red Bean Curd Sauce—a classic Chinese-style dish with rich, savory, and slightly salty flavors. 🐖🌶️


Ingredients

  • 2 lbs pork ribs, cut into bite-sized pieces
  • 2–3 tablespoons fermented red bean curd (red tofu)
  • 2 tablespoons soy sauce
  • 1 tablespoon rice wine or Shaoxing wine
  • 1 teaspoon sugar
  • 2 cloves garlic, minced
  • 1 small piece of ginger, sliced thinly
  • 2–3 green onions, chopped
  • 1–2 tablespoons vegetable oil
  • ½ cup water or chicken broth

Instructions

1. Prepare the Pork Ribs

  1. Rinse the ribs and pat dry.
  2. Optional: blanch ribs in boiling water for 2–3 minutes to remove impurities, then drain.

2. Make the Sauce

  1. Mash the red bean curd with ½ tablespoon water to make a paste.
  2. In a small bowl, mix mashed red bean curd, soy sauce, rice wine, and sugar.

3. Cook the Ribs

  1. Heat vegetable oil in a wok or large skillet over medium heat.
  2. Sauté garlic and ginger until fragrant.
  3. Add pork ribs and sear until lightly browned on all sides.

4. Simmer in Sauce

  1. Pour the red bean curd sauce over the ribs.
  2. Add ½ cup water or broth.
  3. Cover and simmer over low heat for 25–30 minutes, until ribs are tender and sauce is slightly thickened.

5. Finish and Serve

  • Stir in chopped green onions before serving.
  • Serve hot with steamed rice and stir-fried vegetables.

💡 Tips:

  • Adjust the amount of red bean curd depending on your preference for saltiness and flavor intensity.
  • For a slightly sweet variation, add a teaspoon of honey or sugar toward the end of cooking.
  • You can thicken the sauce with a cornstarch slurry (1 tsp cornstarch + 1 tsp water) if desired.
