Here’s a simple and delicious way to make Salmon with Potatoes and Green Beans—a healthy, complete meal all on one plate. 🐟🥔🥦


Ingredients

  • 2 salmon fillets (about 6 oz each)
  • 1 lb small potatoes (Yukon Gold or red), halved or quartered
  • 8 oz green beans, trimmed
  • 2–3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Optional: lemon wedges, fresh herbs (like parsley or dill)

Instructions

1. Preheat Oven

  • Preheat oven to 400°F (200°C).

2. Prepare Potatoes

  1. Toss potatoes with 1 tablespoon olive oil, salt, pepper, garlic powder, and paprika.
  2. Spread on a baking sheet in a single layer.
  3. Roast for 20 minutes.

3. Add Salmon and Green Beans

  1. While potatoes are roasting, season salmon with salt, pepper, and a drizzle of olive oil.
  2. Toss green beans with 1 tablespoon olive oil, salt, and pepper.
  3. After the potatoes have roasted 20 minutes, add salmon and green beans to the baking sheet.

4. Roast Together

  • Roast for another 12–15 minutes, until salmon is cooked through (opaque and flakes easily with a fork) and green beans are tender-crisp.

5. Serve

  • Serve salmon with roasted potatoes and green beans.
  • Optional: squeeze lemon over the salmon and sprinkle with fresh herbs.

💡 Tips:

  • You can parboil potatoes for 5–7 minutes before roasting to reduce cook time.
  • For extra flavor, add minced garlic or a sprinkle of Parmesan over the vegetables before roasting.
  • This can also be made in a sheet-pan meal style for minimal cleanup.
