Blackberry cobbler

Posted on October 26, 2025 by Admin
Ah, Blackberry Cobbler — warm, fruity, and perfectly sweet with a golden, buttery topping. Here’s a classic stovetop/oven-friendly recipe:

🫐 Blackberry Cobbler

Ingredients

For the filling:

  • 4 cups fresh or frozen blackberries

  • ½ cup granulated sugar (adjust to taste depending on berry sweetness)

  • 1 tablespoon cornstarch (for thickening)

  • 1 teaspoon lemon juice

  • ½ teaspoon vanilla extract (optional)

For the topping:

  • 1 cup all-purpose flour

  • ¼ cup granulated sugar

  • 1 teaspoon baking powder

  • ¼ teaspoon salt

  • ¼ cup unsalted butter, melted

  • ½ cup milk

Instructions

  1. Preheat oven:

    • Preheat oven to 375°F (190°C).

  2. Prepare the filling:

    • In a bowl, mix blackberries, sugar, cornstarch, lemon juice, and vanilla.

    • Pour into a greased 8×8-inch baking dish or similar ovenproof dish.

  3. Make the topping:

    • In another bowl, mix flour, sugar, baking powder, and salt.

    • Stir in melted butter and milk until just combined; batter will be slightly thick.

  4. Assemble the cobbler:

    • Spoon the batter over the blackberry mixture in dollops. It doesn’t need to cover completely — it will spread while baking.

  5. Bake:

    • Bake for 35–40 minutes, until the topping is golden and a toothpick inserted in the topping comes out clean.

  6. Serve:

    • Let cool slightly, then serve warm. Excellent with vanilla ice cream or whipped cream.

Tips & Variations

  • Extra flavor: Add ½ teaspoon cinnamon or nutmeg to the topping.

  • Juicier filling: Mix in a little orange zest or a splash of brandy.

  • Gluten-free: Use a 1:1 gluten-free flour blend.

  • Other berries: Can be made with blueberries, raspberries, or a mixed berry combination.

If you want, I can give a “quick stovetop blackberry cobbler” version that can be made entirely on the stove in about 20 minutes without an oven.

Do you want me to do that?
