Oatmeal cake

Oatmeal cake is a cozy, old-fashioned dessert — moist, comforting, and often topped with a caramel-coconut broiled icing. Here’s a classic version that’s perfect for any time you want something warm and hearty.


🍰 Old-Fashioned Oatmeal Cake

🧂 Ingredients

For the cake:

  • 1 cup old-fashioned oats

  • 1¼ cups boiling water

  • ½ cup (1 stick) unsalted butter, softened

  • 1 cup brown sugar, packed

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1½ cups all-purpose flour

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • ½ tsp salt

  • ¼ tsp nutmeg (optional)

For the coconut topping (broiled icing):

  • ½ cup brown sugar, packed

  • ¼ cup unsalted butter, melted

  • 2 tbsp heavy cream or milk

  • ¾ cup shredded coconut

  • ½ cup chopped pecans or walnuts (optional)


🔪 Instructions

1. Soak the oats

  • In a bowl, combine oats and boiling water. Stir and let sit for 20 minutes until the oats absorb the water and soften.

2. Make the batter

  • Preheat oven to 350°F (175°C). Grease a 9×9-inch or 8×8-inch baking pan.

  • In a large bowl, cream together butter, brown sugar, and white sugar until fluffy.

  • Beat in eggs and vanilla.

  • Stir in the soaked oats (they should be slightly cooled).

  • Add flour, baking soda, cinnamon, salt, and nutmeg; mix until combined.

3. Bake

  • Pour batter into prepared pan.

  • Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.

4. Make the topping

  • While the cake bakes, mix together brown sugar, butter, cream, coconut, and nuts.

  • When the cake is done, spread the topping evenly over the hot cake.

5. Broil the top

  • Turn on your oven’s broiler and broil the cake for 1–2 minutes, just until the topping bubbles and turns golden brown. Watch carefully—it burns quickly!

6. Cool & enjoy

  • Let the cake cool slightly before serving.

  • Serve warm or at room temperature — fantastic with whipped cream or vanilla ice cream.
