Instructions:

1. Make the crust:

  1. In a bowl, mix flour and sugar.

  2. Cut in cold butter until mixture resembles coarse crumbs.

  3. Add egg yolk and cold water; mix until dough comes together.

  4. Wrap in plastic and chill for 30 minutes.

2. Blind bake the crust:

  1. Roll out dough to fit a tart pan (9–10 inches).

  2. Line with parchment, fill with pie weights or dried beans.

  3. Bake at 375°F (190°C) for 15 minutes, remove weights, bake 10–15 more minutes until golden.

  4. Cool completely.

3. Make the pastry cream:

  1. Heat milk in a saucepan until just boiling.

  2. Whisk egg yolks, sugar, and cornstarch until smooth.

  3. Slowly pour hot milk into yolks, whisking constantly.

  4. Return mixture to saucepan, cook over medium heat until thickened.

  5. Remove from heat, stir in butter and vanilla.

  6. Cool, covering surface with plastic wrap to prevent skin.

4. Assemble the tart:

  1. Spread pastry cream evenly in the cooled tart shell.

  2. Arrange strawberry slices on top in a circular pattern.

  3. Optional: brush with warmed apricot jam or glaze for shine.
