🧀 1. Cheesecake Layer

Ingredients

  • 2 packages (8 oz each) cream cheese, softened
  • ½ cup granulated sugar
  • 2 tsp vanilla extract
  • 2 large eggs
  • ½ cup sour cream
  • 1 tbsp cornstarch (helps it slice neatly)

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Line a 9-inch round cake pan with parchment; grease the sides.
  3. Beat cream cheese until smooth.
  4. Add sugar and beat until creamy.
  5. Add vanilla, eggs (one at a time), sour cream, and cornstarch. Mix just until smooth.
  6. Pour into pan and bake 35–40 minutes, or until set but slightly jiggly in center.
  7. Cool completely; then chill in fridge at least 2 hours (overnight best).

🍰 2. White German Chocolate Cake Layers

(This uses melted German’s sweet chocolate but keeps the crumb pale by adding it carefully.)

Ingredients

  • 4 oz German’s sweet chocolate, melted and cooled
  • ½ cup hot water (to melt chocolate)
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 eggs, separated
  • 1 tsp vanilla extract
  • 2 ½ cups cake flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup buttermilk

Instructions

  1. Melt chocolate with hot water; cool to room temp.
  2. Preheat oven to 350°F (175°C). Grease two 9-inch cake pans and line bottoms with parchment.
  3. Cream butter + sugar until fluffy.
  4. Add egg yolks one at a time, beating well.
  5. Mix in chocolate and vanilla.
  6. In a separate bowl, whisk flour, baking soda, and salt.
  7. Add dry ingredients alternately with buttermilk.
  8. Beat egg whites to soft peaks; fold gently into batter.
  9. Divide into pans and bake 25–30 minutes, until the top springs back.
  10. Cool completely.

🥥 3. Classic Coconut–Pecan Frosting

Ingredients

  • 1 cup evaporated milk
  • 1 cup granulated sugar
  • 3 egg yolks
  • ½ cup unsalted butter
  • 1 tsp vanilla extract
  • 1 ⅓ cups sweetened shredded coconut
  • 1 cup chopped pecans

Instructions

  1. In a saucepan over medium heat, whisk milk, sugar, yolks, and butter.
  2. Cook 10–12 minutes until thickened and golden.
  3. Remove from heat; stir in vanilla, coconut, and pecans.
  4. Cool completely — it will thicken as it cools.

🧱 4. Assembly

  1. Place one white cake layer on a serving plate.
  2. Spread a very thin layer of frosting (acts as glue).
  3. Place the chilled cheesecake layer on top.
  4. Add second white cake layer.
  5. Frost the top and the top edges only with the coconut-pecan frosting (this style doesn’t usually cover the sides).
  6. For a polished look, frost lightly around the sides or leave them exposed for a stacked-layer look.
