Ingredients (Makes ~24 candies)
-
1 cup pecan halves
-
1 cup semisweet chocolate chips (or chocolate melts)
-
1/2 cup caramel bits (or soft caramels, unwrapped)
-
2 tbsp heavy cream (optional, for smoother caramel)
-
Sea salt (optional, for sprinkling)
Instructions
-
Prepare pecans:
-
Line a baking sheet with parchment paper.
-
Arrange pecan halves in small clusters (3–4 halves per cluster) on the parchment.
-
-
Add caramel:
-
If using caramel bits, place a few on top of each pecan cluster.
-
If using soft caramels, melt them gently with heavy cream in a microwave-safe bowl for 20–30 seconds until smooth, then spoon over pecans.
-
-
Melt chocolate:
-
Melt chocolate chips in a microwave-safe bowl in 20–30 second intervals, stirring between each, until smooth.
-
-
Assemble turtles:
-
Spoon melted chocolate over each pecan/caramel cluster to cover.
-
Optional: sprinkle lightly with sea salt while chocolate is still soft.
-
-
Chill and set:
-
Place baking sheet in the refrigerator for 30–45 minutes until chocolate is firm.
-
-
Serve:
-
Remove from parchment and enjoy! Store in an airtight container in the fridge.
-
💡 Tips:
-
For a faster version, you can use store-bought caramel squares and microwave them directly over pecans.
-
Mini chocolate chips work well for small, bite-sized turtles.
-
These candies also make great homemade gifts—wrap in small cellophane bags.
I can also give a “fudgy, ultra-rich Turtle Candy” version with a layer of dark chocolate ganache under the pecans and caramel for extra decadence. Do you want that version?
