Ingredients (8 servings)

Fruit filling

  • ½ tsp cinnamon (optional)

Biscuit topping

  • 1 cup all-purpose flour
  • 1 cup granulated sugar (or ½ sugar + ½ brown sugar for richer flavor)
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup milk
  • ¼ cup butter, melted
  • Optional: ½ tsp vanilla extract

Instructions

1. Preheat oven

  • 375°F (190°C)
  • Grease a 9×13-inch baking dish.

2. Prepare the peach filling

  • Peel (if desired) and slice peaches.
  • Toss with sugar, lemon juice, cinnamon, and cornstarch.
  • Pour into the prepared baking dish.

3. Make the biscuit topping

  • In a bowl, mix flour, sugar, baking powder, and salt.
  • Stir in milk, melted butter, and vanilla until combined — slightly thick batter.

4. Assemble

  • Spoon the batter evenly over the peaches. It doesn’t need to completely cover — it will spread as it bakes.

5. Bake

  • 35–45 minutes, until topping is golden brown and fruit is bubbling.

6. Serve

  • Let cool 10–15 minutes. Serve warm with vanilla ice cream or whipped cream.
