Here’s a classic Christmas Peanut Butter Balls recipe—rich, chocolaty, and perfect for holiday treats.


Christmas Peanut Butter Balls (Buckeyes)

Ingredients (makes ~30 balls):

  • 1 cup creamy peanut butter
  • ½ cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 3–4 cups powdered sugar (adjust for consistency)
  • 2 cups semi-sweet chocolate chips
  • 2 tbsp shortening or coconut oil (optional, for smoother chocolate)

Instructions:

  1. Make peanut butter mixture:
    • In a medium bowl, mix peanut butter, softened butter, and vanilla until smooth.
    • Gradually add powdered sugar until the mixture is firm enough to roll into balls.
  2. Shape the balls:
    • Roll mixture into 1-inch balls and place on a parchment-lined baking sheet.
    • Chill in the refrigerator for at least 30 minutes so they are firm.
  3. Dip in chocolate:
    • Melt chocolate chips with shortening or coconut oil in a microwave-safe bowl (microwave in 30-second intervals, stirring until smooth) or use a double boiler.
    • Using a fork or toothpick, dip each peanut butter ball into the chocolate, letting excess drip off. Return to parchment.
  4. Chill and set:
    • Refrigerate until chocolate is firm, about 1 hour.
  5. Serve:
    • Arrange on a festive plate or store in an airtight container in the fridge.

💡 Tips:

  • Buckeye style: Leave a small circle of peanut butter visible on top before chilling for the classic “buckeye” look.
  • Add crushed peppermint, sea salt, or sprinkles to the chocolate for a holiday twist.
  • For easier rolling, slightly wet your hands or use a small cookie scoop.
