Crockpot Barbecue Ribs

Ingredients (serves 4–6):

  • 2–3 lbs pork ribs (baby back or spare ribs)
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika (optional, for smoky flavor)
  • 1 ½ cups barbecue sauce (your favorite)
  • ½ cup water, apple juice, or beer (for slow cooking)

Instructions:

  1. Prep the ribs:
    • Remove the thin membrane from the back of the ribs (optional but helps them be more tender).
    • Season both sides with salt, pepper, garlic powder, onion powder, and smoked paprika.
  2. Arrange in crockpot:
    • Place ribs in the slow cooker. You can cut them into sections to fit better.
    • Pour water or apple juice around the ribs (not directly on top of the seasoning).
  3. Cook:
    • Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the meat is tender and nearly falling off the bone.
  4. Add barbecue sauce:
    • About 30 minutes before serving, brush ribs generously with barbecue sauce.
    • Cover and cook for the remaining time to let the sauce set.
  5. Optional finishing step:
    • For a caramelized finish, place ribs on a baking sheet, brush with more barbecue sauce, and broil in the oven for 3–5 minutes until bubbly and slightly charred.
  6. Serve:
    • Slice between bones and serve with extra barbecue sauce, coleslaw, or baked potatoes.

💡 Tips:

  • If you like a spicier kick, mix some hot sauce or cayenne into the barbecue sauce.
  • You can layer onions or garlic cloves in the crockpot for added flavor.
  • Leftovers are great in sandwiches or tacos!
