Roasted Potatoes and Onions

  • 4 medium potatoes (Yukon Gold or Russet)
  • 2 medium onions (yellow or white)
  • 3 tbsp olive oil
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp garlic powder (optional)
  • 1 tsp paprika or smoked paprika (optional)
  • Fresh herbs like rosemary, thyme, or parsley (optional)

Instructions:

  1. Preheat oven: 425°F (220°C).
  2. Prepare vegetables:
    • Wash and peel potatoes (optional for skin-on texture). Cut into 1-inch cubes.
    • Peel onions and cut into wedges or thick slices.
  3. Season:
    • In a large bowl, toss potatoes and onions with olive oil, salt, pepper, garlic powder, and paprika.
  4. Roast:
    • Spread the mixture evenly on a baking sheet.
    • Roast for 35–45 minutes, stirring halfway through, until potatoes are golden brown and onions are caramelized.
  5. Serve:
