Here’s a vibrant and flavorful recipe for a Spicy Shrimp and Avocado Rice Bowl — fresh, satisfying, and packed with bold flavors.


🍚 Ingredients (serves 2–3)

For the rice

  • 1 cup (180 g) jasmine or basmati rice
  • 2 cups (480 ml) water or broth
  • ½ tsp salt

For the shrimp

  • ½ lb (≈ 225 g) raw shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper (optional, for extra heat)
  • Salt and black pepper to taste

Bowl toppings

  • 1 ripe avocado, sliced or diced
  • 1 cup shredded lettuce or baby spinach
  • ½ cup diced tomatoes or cherry tomatoes, halved
  • ¼ cup chopped fresh cilantro
  • 2–3 tbsp spicy mayo (mix mayonnaise + sriracha) or plain yogurt for a lighter option
  • Lime wedges, for serving
  • Optional: sliced radishes, pickled onions, or corn

1. Cook the rice

  1. Rinse rice under cold water until water runs clear.
  2. In a medium pot, bring water or broth and salt to a boil.
  3. Add rice, reduce heat to low, cover, and simmer 15–20 minutes until water is absorbed. Fluff with a fork.

2. Prepare the shrimp

  1. In a bowl, toss shrimp with olive oil, chili powder, smoked paprika, garlic powder, cayenne (if using), salt, and pepper.
  2. Heat a skillet over medium-high heat. Add shrimp and cook 2–3 minutes per side until pink and opaque. Remove from heat.

3. Assemble the bowls

  1. Divide rice among bowls.
  2. Top with shrimp, avocado, lettuce, tomatoes, and cilantro.
  3. Drizzle with spicy mayo or yogurt and squeeze fresh lime over the top.
  4. Add optional toppings as desired.

  • Marinate shrimp: Let shrimp sit in the spice mixture for 10–15 minutes for deeper flavor.
  • Veggie boost: Add roasted bell peppers, zucchini, or steamed broccoli for more color and nutrition.
