Here’s a simple and crispy zucchini fritters recipe you can make in under 30 minutes.


🥒 Zucchini Fritters

Ingredients (makes ~10 fritters)

  • 2 medium zucchinis, grated
  • 1 small onion, grated or finely chopped (optional)
  • 1–2 cloves garlic, minced
  • 2 eggs
  • ½ cup all-purpose flour (or breadcrumbs for extra crunch)
  • ½ tsp salt (plus extra to draw moisture from zucchini)
  • ¼ tsp black pepper
  • ¼ tsp paprika or chili flakes (optional)
  • Oil for frying
  • Optional toppings: sour cream, Greek yogurt, tzatziki, or fresh herbs

Instructions

1. Prep the zucchini

  1. Grate the zucchini.
  2. Sprinkle with a little salt and let sit 10 minutes to draw out water.
  3. Squeeze the zucchini using a clean towel or your hands to remove excess liquid.

2. Mix the batter

  • In a large bowl, combine the squeezed zucchini, onion, garlic, eggs, flour, pepper, and optional spices.
  • Mix until it forms a thick batter. Add a bit more flour if too wet.

3. Fry

  • Heat oil in a skillet over medium heat.
  • Drop spoonfuls of the batter into the pan and flatten slightly.
  • Fry 3–4 minutes per side, until golden brown and crispy.
  • Drain on paper towels.

4. Serve

  • Serve warm with sour cream, yogurt, or a squeeze of lemon.
  • Sprinkle fresh herbs like parsley, dill, or chives if desired.

Tips

  • For extra flavor, add grated cheese (parmesan, feta, or cheddar).
  • Add other veggies like carrots or corn to mix things up.
  • To make them healthier, bake at 425°F (220°C) for 20–25 minutes, flipping halfway.
