🐒 Chocolate Pecan Turtle Clusters

Makes: ~20–24 clusters

Ingredients

  • 1 cup pecan halves
  • Β½ cup caramel bits or soft caramel squares
  • 1 cup semi-sweet chocolate chips (or dark chocolate)
  • 1 tsp butter or vegetable oil (optional, for smoother chocolate)
  • Sea salt (optional, for sprinkling)

Instructions

1. Toast the Pecans (Optional but Flavorful)

  • Preheat oven to 350Β°F (175Β°C).
  • Spread pecans on a baking sheet and toast 5–7 minutes, until fragrant.
  • Let cool.

2. Melt Chocolate

  1. In a microwave-safe bowl, melt chocolate chips in 20–30 second intervals, stirring in between.
  2. Optional: stir in 1 tsp butter or oil for glossy, smooth chocolate.

3. Assemble the Clusters

  1. Line a baking sheet with parchment paper.
  2. Place 2–3 pecan halves for each cluster on the sheet.
  3. Top with a small piece of caramel (1 tsp).
  4. Spoon melted chocolate over pecans and caramel, fully covering but leaving the cluster mound.
  5. Sprinkle lightly with sea salt if desired.

4. Chill

  • Refrigerate 30–60 minutes, or until chocolate and caramel are firm.

5. Serve

  • Store clusters in an airtight container in the fridge for up to 1 week.
  • Serve slightly chilled or at room temperature.

Variations

  • Milk Chocolate or White Chocolate: Swap chocolate type for different flavors.
  • Nut Mix: Use a mix of pecans, almonds, or walnuts.
  • Mini Turtle Clusters: Use mini chocolate chips and smaller caramel bits for bite-sized treats.
  • Drizzle Style: Drizzle chocolate over pre-formed caramel-pecan piles instead of fully coating for a lighter treat.
