Mocha layer cake

Here is a rich, elegant Mocha Layer Cake — soft chocolate cake, silky mocha buttercream, and a smooth mocha ganache. Perfect for birthdays or special occasions. ☕🍫🎂


☕🍫 Mocha Layer Cake

Makes: Two 8-inch layers

Prep Time: 20 minutes

Bake Time: 30–35 minutes

Assembly Time: 20 minutes


⭐ Ingredients

For the Chocolate Cake

  • 1¾ cups (220 g) all-purpose flour
  • ¾ cup (75 g) unsweetened cocoa powder
  • 1½ cups (300 g) sugar
  • 1½ tsp baking powder
  • 1½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • ½ cup (120 ml) vegetable oil
  • 1 cup (240 ml) buttermilk (or milk + 1 tbsp vinegar)
  • 1 cup (240 ml) hot coffee (fresh or instant)
  • 1 tsp vanilla extract

For the Mocha Buttercream

  • 1 cup (225 g) unsalted butter, softened
  • 3 cups (360 g) powdered sugar
  • ¼ cup (25 g) cocoa powder
  • 2 tbsp strong brewed coffee (or 2 tsp instant coffee + 1 tbsp hot water)
  • 1 tsp vanilla
  • Pinch of salt

For Mocha Ganache (optional drip)

  • ½ cup (120 ml) heavy cream
  • 1 cup (170 g) dark chocolate chips
  • 1 tsp instant espresso or 1 tbsp strong coffee

⭐ Instructions

1. Make the Cake

  1. Preheat oven to 350°F (175°C).
  2. Grease two 8-inch round pans and line bottoms with parchment.
  3. In a large bowl, whisk flour, cocoa, sugar, baking powder, baking soda, salt.
  4. Add eggs, oil, buttermilk, and vanilla. Mix until smooth.
  5. Pour in hot coffee last and mix gently — the batter will be thin (that’s good!).
  6. Divide batter between pans.
  7. Bake 30–35 minutes or until a toothpick comes out clean.
  8. Cool 10 minutes, then turn cakes out onto racks to cool fully.

2. Make Mocha Buttercream

  1. Beat butter until very fluffy (3 minutes).
  2. Add powdered sugar + cocoa powder gradually.
  3. Add coffee, vanilla, and salt.
  4. Beat until creamy and smooth.
    If too thick: add a teaspoon of coffee or milk.
    If too thin: add 2–3 tbsp powdered sugar.

3. Make Mocha Ganache (optional)

  1. Heat cream until nearly boiling.
  2. Pour over chocolate chips + instant coffee.
  3. Let sit 2 minutes, then stir smooth.
  4. Cool until thick but pourable.

4. Assemble the Cake

  1. Level cakes if needed.
  2. Place first layer on a plate; spread ⅓ of the buttercream.
  3. Add second layer; frost top and sides with remaining buttercream.
  4. For a drip effect, spoon cooled ganache around edges, letting it drip down.
  5. Chill 20 minutes before slicing for clean cuts.

⭐ Optional Add-Ins & Variations

Mocha Almond Cake

Add ½ cup toasted sliced almonds between layers.

White Mocha Version

Use white chocolate ganache + skip cocoa in frosting.

Extra Coffee Boost

Add 1 tbsp espresso powder directly into cake batter.

Mocha Cream Filling

Fold whipped cream into some buttercream for a light middle layer.
